Offer set amounts or let people choose their own. The buyer pays by card and the money is yours straight away, or they pay by cash or bank transfer and it starts working once you mark it received. Either way, it is income before a single photo is taken.

Redeemed when they are ready
The person who receives it enters the code at checkout and its value comes off the total, the voucher itself settling the shoot rather than a card. Vouchers are spent on one-off bookings, so a shoot given at Christmas is booked for the new year, with nothing for you to chase.
